SINFUL SIDES AND COMFORT CARBS

BABY REDS

Makes 8 servings

INGREDIENTS

• 16 baby red potatoes

• ¼ C. olive oil

• 1 tsp. each garlic powder, salt, and black pepper

• ½ lb. farmer’s cheese, cut into sixteen 2″ squares, about ¼″ thick

• 2 T. chopped fresh chives

• Skewers (wooden skewers soaked in water for 30 minutes or metal skewers)

• Sour cream (optional)

At home, place potatoes in a big microwave-safe bowl with ¼ cup water. Microwave uncovered on high power for 10 minutes or until just tender; drain and set aside until cool enough to handle. Slice off one end of each potato to create a flat top.

In a big bowl, mix oil, garlic powder, salt, and pepper. Add potatoes and toss to coat. Cover and chill for 1 hour.

At camp, grease the grill rack and build fire to medium heat. Thread the chilled potatoes onto the skewers with all flat tops facing the same direction; set them on the grill rack, flat sides down. Cover with foil and cook about 5 minutes, until grill marks appear. Flip so flat tops face up and set a cheese square on each flat surface.

Cover with foil again and cook until the cheese melts. Sprinkle immediately with chives and pepper. Serve with sour cream if desired.
