This recipe is a summer take on the classic cherry Bakewell tart. When making the compote for this recipe you want to ensure your fruits are really ripe as it will give a lot more flavour to the tart.


12 blind baked small sweet shortcrust pastry cases

250g (9oz) nectarine compote (see rhubarb compote method for homemade)

25g (┬żoz) flaked (slivered) almonds

150g (5oz) American or Italian meringue buttercream

zest of 1 orange

2 drops of orange food colouring

12 slices of nectarine

12 gold dragees (optional)
