ALMOND PESTO AND FRESH MOZZARELLA PIZZA

A very simple but delicious pizza—think of it as a Margherita pizza but with a pesto base.

2 pizza rounds of your choice

All-purpose flour for sprinkling

2 teaspoons extra-virgin olive oil

½ teaspoon minced garlic

½ cup Almond Pesto (see here) or Traditional Basil Pesto (see here)

6 ounces fresh mozzarella cheese, pulled into small chunks

2 plum tomatoes, thinly sliced and seeded

1 tablespoon freshly grated Parmesan cheese

Handful fresh basil leaves, for garnish

Kosher salt and freshly ground black pepper
