14. Mexican stuffed red bell peppers

I am sure you have made stuffed peppers or stuffed cabbage before in your conventional oven. This is not much different. You will need to prepare the filling separately on your stovetop however. Do not worry, there is nothing complicated about this recipe, only deliciousness.

Ingredients:

• 1 ½ pounds ground turkey

• 1 sliced fresh avocado

• 1 envelop taco seasonings

• 1 minced green onions

• 1 tbsp. minced garlic

• 1 tbsp. water

• 2 large bell peppers (green, red or yellow)

• 1 ½ cups shredded Monterey jack

Servings: 4

Preparation time: 50 min

Method:

Preheat the oven to 350 degrees F.

Grease a baking sheet and set aside.

Cut in half each bell peppers, remove all seeds and set aside.

I like to precook the bell peppers as the meat is cooking. Brush some olive oil inside the bell pepper, place them face u on a baking sheet.

Bake for 10 minutes, remove, then set aside.

Meanwhile, in a large skillet heat a little oil and cook the garlic and onion for 5 minutes before adding the ground meat, water and taco seasonings.

Stir frequently as you want the meat the cook evenly and stay crumbled, just like taco meat.

Stuff all peppers with meat mixture and add the cheese on top. Place back on the toaster-oven for about 10 -15 minutes or until cheese is completely melted.

Serve with sliced avocado on top for color and taste.
