Ingredients

2 cups organic corn, cooked (about 4 cobs)

1 cup de-seeded and chopped tomatoes

1 cup cucumber, chopped

1 red bell pepper, chopped

1 bunch cilantro, finely chopped

1 clove garlic, minced

¼ cup red onion, finely chopped

¼ cup fresh lime juice

2 Tbsp olive oil

Sea salt

Make It Like So

1. Mix all the ingredients together.

2. Place in the fridge to let the flavors mix for about 1 hour before serving.

Some experts believe that it is now impossible to get truly organic corn, because all corn has been contaminated in some way by genetic modification. I truly hope they’re wrong, but I couldn’t say for sure. Your best bet with corn is to know your farmer. Reserve corn eating for the summer (or whenever it grows where you live) and buy it directly from the source.
