STUFFED BREAD ‘ROLL-UPS’
The idea for these came from a holiday to Portugal, where all the bakeries, alongside the world-famous custard tarts, sold ‘chorizo rolls’. I discovered these were really simple bread rolls that had a few scant slices of chorizo rolled up inside during the second prove. On cooking, the oils from the sausage ooze a little into the dough, and you have a really tasty simple snack that’s perfect for picnics and packed lunches.
Not limiting my ‘roll-ups’ to chorizo, they are an excellent way to use up bits and bobs from the fridge. They are particularly useful for using up leftover roast veg or other toppings you may have going spare from a previous pizza-making session.
