Dhansak is usually cooked with chicken or beef and includes pineapple and pineapple juice.

Ingredients:

2 portions skinny curry base mix

300g lean meat, cubed

1 tsp tomato puree

1 tbsp curry powder

½ tsp ground garlic

½ tsp ground ginger

½ tsp turmeric

½ tsp garam masala

½ tsp chilli powder

½ tsp salt

1 tsp sugar

100g pineapple chunks & 1 tbsp pineapple juice

2 tsps sunflower oil

Method:

Brown the meat in a frying pan with 1 tsp sunflower oil. Add all the dry spices and tomato puree and cook for a further 2 minutes. Stir in the skinny curry base mix, cover and leave to cook gently for approx. 20 minutes or until the meat is tender and cooked through. Add the pineapple chunks and juice. Warm through and serve immediately.
