Freezing with Liquid Nitrogen
Manufacturers liquefy nitrogen to purify it, but they also sell nitrogen in its liquid form. You may have seen a scientist experimenting with liquid nitrogen. It is so cold that a rose dipped in it freezes instantly and will shatter when tapped against a hard surface. Liquid nitrogen boils quickly when exposed to room temperature. Cold nitrogen gas coming from the liquid causes water vapor in the air to condense into fog.
Liquid nitrogen is most useful when prolonged and deep cooling is necessary, as in the transportation of food products, blood, and medical supplies over long distances. It is also used in a branch of science called cryogenics, which is the study of the production of very low temperatures and the way materials act at those temperatures.
