Beat sugar, egg yolks, and butter. Add lemon juice, rind (zest), and flour and mix together. Add milk, then fold in the egg whites, stiffly beaten. Bake three-fourths of an hour in a slow oven using only one crust.
Author’s note: Start it off on lowest shelf of a preheated 400° oven for 10 minutes, then turn oven to 350° and bake for another 30 minutes, or until firm. Cover top with foil tent if getting dark too fast.
