CANDIED FENNEL WITH PERNOD-ORANGE SORBET AND PERNOD WHIPPED CREAM

Fennel to me is synonymous with licorice, one of my all-time favorite flavors. Candying fennel bulbs, which brings out their natural sweetness, turns them into a confection with a compelling licorice taste that’s heightened by Pernod-spiked whipped cream. For a bracing counterpoint, I like to serve the fennel with icy Pernod-orange sorbet. I have always loved to eat orange-fennel salads in the winter, so why not make those same flavors into a dessert? The result is deeply harmonious and refreshing.
