MADAME CROQUE In my Croque Madame, you will not find any pineapple! Follow the above recipe but add a freshly fried egg after baking.

1. Heat the milk with salt and pepper. In another pot, melt the butter with some fresh nutmeg.

2. Sift the flour into the melted butter while whisking.

3. Add the warm milk, a little bit at a time, into the flour and butter mix and whisk vigorously.

4. Remove the pot from the burner and add the shredded cheese while stirring. Season with salt and pepper.
