Heat a small pot. Add the oil, and sofrito and cook until softened, 2–3 min. Add the bean soup and stir through, adding a drizzle of water if needed to make it stirable. Add the rice, stir through, then reduce the heat to low, cover, and cook until it’s all warm and combined, another 4–5 min. Uncover, stir, taste for salt and adjust. Add herbs (if using) and eat.

SO MUCH BETTER BEAN SOUP (5 min)

2 cups bean soup, 4 kale leaves (stemmed and sliced into thin ribbons), ½–1 tsp Bengali hot sauce (Mr Naga), 1–2 tsp ghee, plain yogurt or raita (optional).
