Directions:
1. In a large skillet crumble then cook the chorizo. Drain any excess grease and set aside.
2. Use plastic gloves before handling the pepper. Remove 1 chipotle pepper then rinse off the adobo sauce using water. Slice lengthwise and remove any seeds. Rinse once more using water. Finely mince the chipotle pepper.
3. Sauté chipotle pepper, onion and garlic into a little bit of butter until onion is translucent. Set aside.
4. Mash potatoes into a large bowl then add the chipotle pepper, onions, garlic, chorizo and cheddar cheese. Mix well.
5. Cool completely. Wrap then refrigerate until you’re ready to prepare the pierogi.
