Sugar Snap Pea And Roasted Fennel Salad

Ingredients:

450 grams // 1lb fresh fennel

3 tablespoons olive oil

Sea salt

Black pepper

1 lemon

2 tbsp pumpkin or toasted sunflower seeds

150 grams // 5 oz sugar snap peas

Instructions:

Heat your oven to 225C // 450F.

Cut the fronds and stalks from the fennel bulb and cut into quite small wedges. Place them into your baking dish, drizzling with olive oil and season.

Halve the lemon and squeeze the juice out.

Peel some lemon rind and put with the fennel.

Bake in your oven for twenty to thirty minutes, the fennel will be a golden colour.

While this is baking in the oven, toast your pumpkin seeds using your dry pan over a medium heat only for a couple of minutes, do not burn them.

Once the fennel is cooked mix it together with your pumpkin seeds and sugar snap peas. Arrange on your plate and enjoy.
