INGREDIENT TIP: Cinnamon extract is more easily found during the baking season (from Halloween to just after New Yearâs). When I find it, I may buy a few bottles. If you canât find it, you may use vanilla instead.
STORAGE TIP: The baked cookies or the dough can be frozen for up to 3 months. Shape the dough into balls, freeze on baking sheets overnight, and transfer to airtight containers. Defrost just enough so the surface gets sticky before rolling in the cinnamon sugar. They may take a little longer to bake if still partially frozen.
