Cauliflower, Cheese & Spinach Pies

Makes 8 Small

- ½ cauliflower, florets removed

- 40g butter

- 2 cups milk

- 3 tablespoons plain flour

- ½ cup grated cheddar cheese

- 4 tablespoons grated pecorino (or Parmesan) cheese

- Small bag (60g) baby spinach

- 3 puff pastry sheets

Steam cauliflower until tender.

Meanwhile, to make the cheese sauce, gently melt the butter in a frying pan.

In a jug, whisk milk and flour together well.

Pour into pan when butter is bubbling and stir constantly until the mixture thickens.

Reduce heat, add cheeses and spinach, season and stir.

Chop the cooled cauliflower and add to the cheese mixture. Season.

Cut 8 bases and lids from the sheets.

Place 4 bases of pastry into Pie Maker, fill with mixture and top with pastry.

Close lid and cook for 8 minutes.

Carefully remove and repeat.
