Dough
1 cup (2 sticks) unsalted butter, softened
cup sugar
1 teaspoon grated lemon zest
1 tablespoon vanilla extract
4 large egg yolks
½ cup ground walnuts
2¼ cups all-purpose flour
1 tablespoon unsweetened cocoa powder (if you like things really chocolatey) (optional)
Filling
¼ cup sugar
1 tablespoon unsweetened cocoa powder
1 teaspoon vanilla extract
2 large egg yolks
½ cup (1 stick) unsalted butter, softened
Topping
1 (4-ounce) bar Ghirardelli dark chocolate for baking
1 cup walnut halves
In a large bowl, mix together the butter, sugar, lemon zest, vanilla, egg yolks, and ground walnuts. Slowly mix in 1¾ cups of the flour and the cocoa powder, if using. Work the mixture into a dough. Chill at least 2 hours or overnight.
Remove the dough from the refrigerator and let it come to room temperature, about 1 hour.
Preheat the oven to 325°F/160°C.
Use the remaining flour to coat the surface you will roll out the dough on. Roll out the dough until it is ¼ inch thick. As you work, coat the rolling pin with flour, and keep sprinkling your work surface with a little bit of flour to prevent sticking. Use your favorite cookie cutters to cut out various shapes of cookies; keep in mind that the final product is going to be quite filling so the smaller the cookie, the better.
Place the cut-out cookies 1 inch apart on ungreased baking sheets.
Bake the cookies for 10 to 12 minutes. Let cool on a plate or on a baking sheet lined with parchment paper.
Meanwhile, make the cookie filling. In a medium bowl, whisk together the sugar, cocoa powder, vanilla, and egg yolks. Add the softened butter, and whisk everything together until the mixture appears smooth and creamy.
Spread the cream on the bottom side of a cookie and cover it with another cookie, placing it bottom side down, to make a cookie sandwich. The cream layer should be thick, about ¼ inch. If possible, use a pastry bag to layer the filling so that the sides of the cookie sandwiches don’t get messy.
Melt the chocolate bar according to the directions on the package. Dip one side of each cookie sandwich into the chocolate. Top each cookie with a walnut half.
