Walnut Honey and Olive Gingies

Ingredient List:
½ cup of walnuts â chopped
1 egg â free-range â beaten
2 tsp. of lemon zest
¾ cup of honey â raw and local
2/3 cup of EVOO
2 tsp. of vanilla extract
¼ tsp. of bicarb soda
2 ¼ cups of self-rising flour
1 tbsp. of ginger â ground
1 tsp. of baking powder

Preparation:
Preheat oven to 370°F.
Line baking trays.
Take a bowl.
Sift in flour, bicarb, and baking powder.
In the middle pour, honey, oil, zest, vanilla, and egg.
Combine well.
Let it set for 10 minutes.
Roll into balls.
Press one side into chopped walnuts.
Place onto a tray â walnuts up.
Place into the oven.
Bake until golden.
Brush with honey when cooked.
So good!
