CHEESE STRAWS

Yield: 24 Preparation time: 30 minutes, plus 20 minutes chilling time Baking time : 10 minutes

250 g cake flour

a pinch of salt

a pinch of cayenne pepper

a pinch of mustard powder

150 g butter, chilled and cubed

350 ml finely grated Cheddar cheese

1 egg yolk

15 ml water

Sift together the dry ingredients. Use a sharp knife or a food processor to cut the butter into the flour, then blend in 250 ml of the Cheddar cheese in the same way.

Add the egg yolk and enough of the water, mixing it in with the knife or in the food processor, to create a firm dough. Lightly bring the dough together by hand, wrap it in cling film and rest it in the fridge for 20 minutes.

Preheat the oven to 220 ÂșC.

With a floured rolling pin, roll out the dough on a floured sheet of baking paper to a thickness of 3 mm. Sprinkle the remaining 100 ml Cheddar cheese onto half of the dough and fold the other half of the dough over the cheese. Gently roll the dough to 3 mm thick, making sure the cheese is nicely sandwiched between the layers. Cut it lengthwise into 1-cm strips, twist each strip and place them on an ungreased baking tray.

Bake for about 10 minutes or until the cheese straws are golden brown and dry.
