Chapter 10: Sophomore Year Recipes

Chicken Noodle Soup

Ingredien ts:

3 cans chicken broth

8 ounces white meat chicken — cooked and cubed

1 large carrot

1 rib celery

¼ medium onion

1 bay leaf

1 teaspoon parsley

½ teaspoon pepper

1 teaspoon margarine

• 1 ounce egg noodles

Instru ctions:

Add the chicken broth to a large saucepan or Crock-Pot. Heat on medium until lightl y boiling. Add chicken. Peel and cut carrot into small “wheels” and add. Cut celery into ¼-inch slices and add to broth. Cut onion into tiny piec es and add. Add bay leaf and pepper. Allow to return to a boil and then simmer on low for 1 hour. Keep covered at all times. Add egg noodles and margarine. Cook 30 minutes and add parsley. Cook another 10 minutes and taste. If the broth tastes weak, add up to 1 teaspoon of salt or ½ of a chicken bouillon cube. Simmer for 15 additional minutes, remove the bay leaf, and serve hot. Makes 4 servings.

Accompani ments:

Serve alone or with oyster or saltine crackers. Add an orange or tangerine for dessert.
