Blood Orange Cornmeal Cake
Total Time Taken: 1 ½ hours
Yield: 12 Servings
Ingredients:
½ teaspoon salt
1 cup all-purpose flour
1 cup butter, softened
1 cup cornmeal
1 cup fresh blood orange juice
1 cup white sugar
2 blood oranges, sliced
2 tablespoons blood orange zest
2 teaspoons baking powder
Directions:
Mix the butter, sugar and orange zest in a container until creamy and fluffy.
Mix the flour, cornmeal, baking powder and salt.
Stir the flour into the butter mixture, alternating it with the orange juice.
Position the orange slices at the bottom of a 9-inch round cake pan coated with baking paper.
Pour the batter over the orange slices and preheat your oven and bake at 350F for 45 minutes or until a toothpick inserted into the center of the cake comes out clean.
When finished, flip the cake upside down on a platter and serve it chilled.
