Tender Pork Stew

16 servings

3 – 4 lbs. pork roast, trimmed and cut into inch cubes

1 tbsp. oil

4 cups water

2 bouillon cubes

1 cup diced onion

1 tsp. dried rosemary, crushed

1 tsp. oregano leaves

1 tsp. sea salt

1 tsp. pepper

4 cups cubed red potatoes

1 10-oz pkg. frozen cut green beans

5 cups diced carrots

1 tsp. Dijon mustard

½ cup flour

1 cup water

In a large, non-stick frying pan, brown the pork cubes in the oil over medium heat and drain. Place the pork cubes in the bottom of a Dutch oven or covered roasting pan. If you have no lid, cover the roasting pain securely with aluminum foil.

Boil the water in a kettle and mix with the bouillon cubes in a large measuring cup or bowl. Stir until the broth is made.

Add the bouillon and the rest of the ingredients over top of the pork cubes. Stir well. Cover and bake at 350° F for 2 hours. Stir every 30 minutes and add water if necessary, one cup at a time.

1 hour before supper, mix the flour and 1 cup water until smooth. Add to the stew and stir well. Continue to bake for one hour more. Let stand for 15 minutes uncovered before serving.

Per serving: 400 calories, 20 g protein, 16 g carbohydrates, 28.4 g total fat, 9.6 g saturated fat, 3.1 g fiber, 370 mg sodium, 3 g sugar.
