My friend Kathy Snyder is a member in good standing in my personal cake club. We share a love for desserts and saddlebred horses, which can be a deadly combo when you’re trying to pull on your riding jods. This is her simple but fabulous recipe, which makes a very silky, rich chocolate pie.

1 prebaked 9-inch Butter Piecrust

1 cup sugar

4 tablespoons cornstarch

6 tablespoons unsweetened cocoa

pinch of salt

4 large egg yolks

2 cups milk

2 tablespoons unsalted butter

1 teaspoon vanilla extract

sweetened whipped cream

chocolate shavings, optional
