Almond Cookies

Total Time Taken: 1 ¼ hours

Yield: 20 Servings

Ingredients:

½ cup butter, softened

1 teaspoon almond extract

2 egg yolks

1 ½ cups all-purpose flour

½ cup almond flour

¼ teaspoon salt

1 teaspoon baking powder

½ cup sliced almonds

2/3 cup white sugar

Directions:

Mix the butter, sugar and almond extract in a container until fluffy and pale.

Put in the egg yolks and stir thoroughly until blended.

Fold in the flours, salt and baking powder.

Drop spoonfuls of batter on a baking sheet coated with baking paper.

Top each cookie with sliced almonds and preheat your oven and bake at 350F for about fifteen minutes until a golden-brown colour is achieved on the edges.

These cookies taste best chilled.
