Ranger Cookies (egg-free)

Ingredients

4 TBSP Organic Cultured Butter

4 TBSP Coconut Oil

3 TBSP Palm Shortening or Nutiva Shortening

1 cup Palm Sugar

1 Chia Egg (1 ½ TBSP ground Chia seeds and 2 TBSP water) and

2 tsp Sunflower Lecithin (or use psyllium in place of lecithin or use 1 Egg)

1TBSP Yacon Syrup (can use Molasses)

1tsp Vanilla

¾ cup Oat Flour

cup sprouted Brown Rice Flour

cup Tapioca Flour

2 TBSP Coconut Flour

1 tsp Baking Soda

½- cup Chocolate Chips

¼ cup dried Cranraisins, if desired

1/3 cup Coconut Flakes

1/4 cup Pecans or Walnuts, chopped

2 TBSP Sunflower Seeds

½ cup Rice Krispies

2 tsp Cinnamon

Directions

In mixer cream butter, coconut oil, and palm oil together, and then add palm sugar. Cream until light in color,(almost white)- several minutes. Add chia egg, sunflower lecithin, vanilla and yacon syrup. Mix well. Then add flours, cinnamon, and baking soda- mix well. Then add the rest of the ingredients. Bake 350° 12- 15 minutes until golden brown. If the cookies haven’t spread halfway through baking, then gently press with spatula.
