Ground cloves- ¼ tsp.
Grated carrots- 2 cups
Cream cheese- 16 ounces
Butter- ½ cup
Confectionerâs sugar- 4 cups
Cream- 3 tbsp.
Vanilla extract- 1 tsp.

Instructions:
Preheat your oven at 300 degrees Fahrenheit.
Toast the pecans in the oven.
In a bowl, mix the brown sugar, sugar, oil, eggs, applesauce and the vanilla extract.
Now add the dry ingredients, flour, baking powder, baking soda, salt, cinnamon, ginger, nutmeg and the cloves. Mix all the ingredients properly.
Fold in the carrots and half of the toasted pecans.
Pour the batter in to a prepared pan and put to bake until the cake is baked properly.
For the frosting, beat the cream cheese, vanilla extract, butter, confectionerâs sugar and the cream. Beat until smooth and fluffy.
Spread the frosting on the cake once the cake is cooled.
Sprinkle the remaining pecans on the cake.
