AT THE CAFÉ WE MAKE MANY RECTANGULAR ROMAN-STYLE PIZZAS, CUT TO order by the square and served at room temperature. Many of our staples I included in my first book, My Bread, and so I have devoted this chapter to our newer pizzas, and a stand-mixer version of pizza bianca. Any of these pizzas work well as appetizers—the larger pies work very well when cut into fifteen small squares and served with wine. Slightly larger slices accompanied by a salad make for an excellent dinner.
