Mixing the dough
Use 50g of water to mix in the salt and add it to the autolyzed flour.
Now, pour 250g levain over the autolyzed flour.
Go on with mixing the dough, pushing your fingers through the dough and stretching the dough up and folding it in over itself. This allows the dough to integrate with the autolyzed flour.
Continue mixing until the starter is properly disseminated in the dough. To achieve consistency, you will have to spend about five to ten minutes mixing the dough.
Put a lid over the dough for about thirty minutes to rest.
