Preheat the oven to 350°F.

Combine the crushed graham cracker crumbs with the butter and press the mixture into an 8-inch square baking pan.

Beat the cream cheese until creamy and mix in the Eagle Brand and egg yolks.

Beat the egg whites until foamy and gradually incorporate the sugar.

Fold the egg whites and vanilla into the cream cheese mixture, and spoon the batter over the graham crust. Bake for 35 minutes, and then cool completely.

Meanwhile, in a saucepan, combine the cornstarch, pineapple, and lemon juice. Bring it to a simmer and cook for 10 minutes, and then set the sauce aside to cool for a few minutes.

Spread the sauce over the cheesecake layer and sprinkle the cherries on top.
