This creamy chicken salad is based on a Danish hen salad, which is a true smørrebrød classic. Because hen is not always available, this recipe suggests using leftover chicken. Many traditional recipes include both asparagus and mushrooms, but this recipe suggests asparagus with the addition of celery root. When asparagus is not in season, string beans or even green peas may be used. Like the Danish Curry Remoulade (this page), this salad is spiced with curry and capers.
