Assemble and serve the cake

7. Assemble the cake layers, brushing the bottom layers with the soak and spreading with the apple butter. Top with the final layer, then spread the frosting evenly on the top and sides of the cake (see this page).

8. Follow the directions for storing and serving the cake (see this page). Slice and serve with some of the compote.

Pear • Use pear butter in place of the apple butter in the cake and filling. Flavor the soak with pear brandy instead of the apple brandy. Use pears or a combination of apples and pears in the compote.
