In a saucepan on medium heat, melt the butter; add the flour to the butter and whisk for 1 minutes. Add the wine and cook, stirring constantly, for 1 minute to reduce. Add the chicken stock and simmer for 2 minutes, or until thickened. Season with salt and pepper.
Add the cream, the peas and pimientos; simmer for 3 minutes. Add the tarragon and mustard, stir well, then add the chicken; cook for another 3 minutes.
Toast the bread, using butter liberally. Cut the bread slices into triangles and arrange on serving plates. Top with the chicken mixture and serve immediately.
