MOLD in the kitchen

A major culprit in foods spoiling is mold; it can also pose a health risk. Be aware that the toxic substances produced by molds (mycotoxins) are found not only in the visible mold filaments on the surface but also deeper within mold-affected food where they cannot be seen. Here’s how you can prevent the food in your fridge and the bread in your pantry from being attacked by microscopic mold spores.

Buy the freshest possible food in small quantities that you will use up quickly. This will greatly reduce the risk of a mold outbreak.

Choose fruit and vegetables that are in good condition, free from bruising and other damage.

Keep food in clean, cool, dry conditions. This means giving bread boxes and other food storage containers a weekly cleaning, making sure you remove any crumbs of bread or little cheese scraps that are prime breeding grounds for mold.
