Directions:

1. Begin by setting your oven to 350° Fahrenheit.

2. Before cooking your squash, poke some holes before cooking it in the microwave for 12 minutes on high heat setting. Remove, then flip over and cook for another 9 minutes.

3. Allow squash to cool, then divide into two pieces, removing the seeds. Scrape out 1 cup of flesh and add to a mixing bowl.

4. Add egg, spinach, egg whites, evaporated milk and spinach into the bowl with squash.

5. Coat the pie dish with some cooking spray, then layer the bottom of the dish with bread crumbs.

6. Add the squash mixture to the dish. Place into the oven and cook for about 45 minutes or until lightly browned on top.

7. Remove quiche from the oven and allow to cool for about 10 minutes before slicing. Serve and enjoy!
