1 Start by making the POP accessories. Harden your fondant with gum tragacanth (see page 9) and shape a few pieces into cone hats for the clowns. Add contrasting colored fondant balls for the pompoms on the hat. You could also leave them white and paint on patterns with edible dusting powder and cocoa butter. Prepare 20 red noses for the clowns from the hardened fondant.
2 Prepare the candy melts (see pages 12–13). Break a piece off a cake ball and roll it into two small pieces to form the fluff of hair on either side of the clown’s head. Dip in some melts and attach to the top of the cake ball. To add a ruffle collar, use a fluted cookie cutter to cut out a piece of flattened cake ball to the same diameter as the head. Attach with candy melts. Dip 1⁄3 inch (1 cm) of a lollipop stick into the candy melts and insert it into the cake ball, through both the ruff and halfway through the head.
3 Dip the whole clown into the white melts, then attach a red nose and hat, if using, while still wet. Let set. Repeat steps 2–3 for the other cake balls.
