Pizza with Shrimp and Roasted Asparagus

Serves 6 ■ Prep time: 10 to 15 minutes ■ Cooking time: 15 minutes

Herbed goat cheese is typically sold right next to the regular goat cheese in the grocery store. If you want, you can substitute regular goat cheese and add dried oregano and thyme to the top of the pizza before baking.

1 bunch asparagus, stem ends trimmed and spears cut into 1-inch pieces

1 pound fresh or frozen bread or pizza dough, thawed according to package directions

1 tablespoon garlic-flavored olive oil

8 ounces cooked medium shrimp, peeled and deveined

¼ cup crumbled herbed goat cheese

Preheat the oven to 400ºF.

Immerse the asparagus in a pot of boiling water and cook for 2 minutes. Drain.

Roll the dough out into a large circle or rectangle about ¼ inch thick. Transfer the dough to a pizza pan or baking sheet. Brush the oil all over the crust, to within ½ inch of the edges. Top with the shrimp, asparagus, and cheese. Bake for 15 minutes, until the crust is golden brown.
