HINTS: To keep hamburger dishes from being overly greasy, use a nonstick pan for browning so that you do not have to add any additional oil or fat. When onions or other vegetables are cooked along with the hamburger, use a minimum amount of oil to start them cooking and then add a few drops of water instead of more oil
Shaker Onion Pie
This rich, hearty supper pie was only one of the dishes found on farmhouse tables for supper after a hard day of work in the fields. With today’s less rigorous work and lighter-eating styles it can serve as the main dish. A rich herb-flavored crust is filled with caramelized onions and bacon and then smothered with an egg and sour cream mixture. You can use a slow cooker to caramelize the onions or cook them a day ahead (see page 22). The baked pie can be frozen tightly wrapped.
SERVES 8 TO 12 AS AN APPETIZER; 6 AS A MAIN COURSE
FOR THE DOUGH
1 tablespoon yeast
2½ cups all-purpose flour
1 teaspoon salt
1½ teaspoons sugar
½ cup water
6 tablespoons (3 ounces) unsalted butter or margarine
½ cup sour cream
½ teaspoon dried basil
¼ teaspoon dried oregano
