Wild mushroom, radicchio, and bresaola
AUTUMNAL | Makes 1 pizza
1 x 12″ (30cm) Crispy pizza base (see page 36)
1 Tbsp extra virgin olive oil
1 clove garlic, crushed
9 oz. (250g) mixed wild mushrooms of choice
1 small radicchio, roughly shredded
Freshly ground black pepper
5 oz. (150g) soft goat’s cheese
3–4 zucchini (courgette) flowers (optional)
2¾ oz. (75g) bresaola slices
1 small bunch flat-leaf parsley, roughly chopped
Chili oil, to serve
