can you say “desperation” pie? This is the pie that happens when there’s nothing else around to fill a waiting crust. It’s also known as Hoosier Pie, Indiana Pie, Quaker Pie, and Finger Pie. In Amish country, replace the sugar with molasses to make Shoofly Pie. In my part of the world, where we sugar the maples, the tradition is to use maple syrup.

The list of ingredients is beautifully small and adaptable. Any way you sugar it or fill it, this pie is as simple as can be and hits the spot when you have little else in the pantry and quiet pie desperation takes hold.
