You've probably noticed that I typically mix the sugar and cornstarch together before adding it to fruit fillings, to get any lumps out of the cornstarch. Here the cornstarch is added separately, so make sure you mix the filling well to eliminate any lumps.
In large measure, the quality of the fruit you use will determine the flavor score for this pie. If you make it with the best fall apples and pears, it will be as good as any fruit pie you could possibly bake—sugar or not.
