1-2 tbsp. of oil, olive

Salt, sea, as desired

Pepper, ground, as desired

2 eggs, large

Optional:

1 chopped onion

2-3 minced garlic cloves

For pastry

1 x 14-16 oz. pkg. of pastry, puff

For garnishing: sesame seeds

Instructions:

1. Place potatoes in pot covered with water + one inch more. Bring to boil on med-high.

2. Leave pot uncovered and cook till potatoes become tender, 20-25 minutes or so.

3. Drain the potatoes and place them in large-sized bowl. Mash and set aside so they can cool.

4. Warm oil in large sized skillet on med-high. Add garlic and onion, if using. Sauté till translucent and soft, five to seven minutes.

5. Stir mixture in with potatoes. Season as desired.

6. Beat an egg in small-sized bowl. Stir potato mixture while slowly adding beaten egg. Then mix thoroughly, till egg is completely integrated into mashed potatoes.

7. Heat oven to 375F. Line rimmed cookie sheet with baking paper. Fill small-sized bowl with filtered water. Cut puff pastry sheets in five-inch squares.

8. Place 1 heaping tbsp. of the filling in middle of squares. Dampen squares’ edges with wet fingers. Fold them into halves, into rectangles or triangles. Pinch edges together so the filling is sealed inside.

9. Beat second egg. Brush over top of pastries. Sprinkle on the sesame seeds. Bake in 375F oven for 1/2 hour, till the pastries are golden and puffed. Serve.
