THE INSPIRATION FOR THIS BEAUTIFUL DESSERT came from Daniel Boulud. Daniel always wanted me to make desserts that were very French, so I decided to make a cake that looked like a classic palet d’or, a flat truffle coated with a thin layer of dark chocolate and topped with a fleck of gold leaf. The cake is all about contrasting textures—crispy meringue and milk chocolate–hazelnut wafer layered with a creamy dark chocolate mousse. The chocolate mousse has very little air in it—it’s almost like a parfait—and has an intense chocolate flavor so that every bite you take is chocolate. It’s not too heavy, though, because it’s perfectly balanced. And it looks like a million dollars with its ultra-shiny chocolate finish and gold leaf accent.
