To make the final dough mix:
STEP 1: In a large bowl, mix all the final dough mix ingredients as instructed using Mixing Dough: Method 2 (shown here) until no dry flour remains.
STEP 2: Cover the dough with a damp cloth and let ferment at room temperature for 4 hours. Refrigerate the dough, covered, for 12 hours more.
To shape and proof the dough:
STEP 1: Turn the dough out on to a work surface. Divide it in half and shape each piece using a tension roll (see Shaping Dough: Method 1—Tension Roll).
