750g young carrots (peeled weight)
375g granulated sugar, plus 100g for rolling
180ml clementine juice – from about 8 fruits
Cook the carrots in a steamer until they are very tender – this will take about 25 minutes. Lay them on clean tea towels to dry for several hours or overnight.
Purée the carrots in a food processor and sieve into a large pan, adding 375g granulated sugar and the clementine juice. Stir the mixture over a low heat until the sugar has dissolved and then increase the heat to medium. Stir constantly until the mixture has thickened to a paste – about 35–40 minutes. Remove the pan from the heat and allow the mixture to cool fully before rolling into balls approximately 2cm in diameter. Roll the balls in the remaining sugar and allow them to dry overnight on a tray lined with non-stick baking paper and covered lightly with cling film.
Store in a cool place and eat within a week.
