The bubbling sound will decrease.

The liquid under the froth at the top will turn transparent amber in color.

The solids at the bottom will turn a golden brown (you can check by gently tilting the pan).

The smell will change. Some have described this as the scent of freshly baked croissants.

Turn off the heat. If you wait too long, the butter will burn and be ruined.

Wait a half hour to allow your ghee to cool slightly. Adding 1⁄8 teaspoon of salt will help any floating particles to sink to the bottom.

Line a strainer with cheesecloth (you may need a few layers) and gently strain the liquefied and purified butter through it into sterilized jars. Discard the rest.
