1 Remove the stem from the cherries. Place a cherry, stem side up, in a cherry pitter (available from large supermarkets, variety stores and kitchenware stores). Press the handles of the cherry pitter together to push the seed out through the base of the cherry.

Coring apples, pears and quinces

All three of these autumn/winter fruits will often require coring before they are used in desserts. Remember to brush the cut surfaces of these fruits with a little lemon juice as soon as they are cut so they don’t discolour.
