Pasta is such a family favourite. We particularly love penne, as it is easy to eat with just a fork and easy to serve too.
SERVES 4â6
250g (9oz) penne pasta
400g (14oz) asparagus spears, tips removed and stems sliced into rings
1 tbsp olive oil
1 large red pepper, deseeded and diced
200g (7oz) button mushrooms, halved
1 garlic clove, crushed
200ml (7oz) pouring double cream
1 tbsp chopped thyme leaves
75g (3oz) Parmesan cheese, grated
Juice of ½ small lemon
Salt and freshly ground black pepper
