Growing up, we didn’t have a lot of desserts in the house, but we always seemed to have a half-eaten box of Neapolitan ice cream languishing in the back of the freezer. And when I say half eaten, I mean more like two-thirds eaten, with the chocolate and vanilla scooped out and the strawberry left behind with only a few half-hearted spoonfuls taken out. My mom refused to buy a new box of ice cream until the old one was finished, so it usually took a few weeks. I’m not sure what it is about strawberry ice cream that I’m so lukewarm about, as I love ice cream and I love fresh strawberries. And every attempt I made at a Neapolitan-flavored dessert left me feeling blah—until I realized that the solution was just to use fresh strawberries. Thus this Neapolitan layer cake was born. Think of it as the best strawberry shortcake ever.
