The glucose oxidase enzyme the bees add is very sensitive to both heat and light, and when excessive and prolonged heating is applied during honey packing to give liquid honey its long shelf-life, the result can be a significant reduction in the enzyme. As well, if the honey has been packed in a clear glass or plastic container, the same destructive effect can occur. This is why all honey used in woundcare should be in the controlled granulation form that doesn’t require significant heating, and why the containers it comes in should either be non-transparent tubes or heavily-tinted jars.120

It also goes almost without saying that manuka honey with high levels of non-peroxide antibacterial activity (case and clinical studies normally use 12+) can be more effective than honey that only produces hydrogen peroxide, since manuka’s special activity is heat-stable, and is not adversely affected by catalase.121
