Baking pan liner paper may be used for these cookies (instead of buttering and flouring the sheets), but if so, do not remove the paper from the cookie sheet until cookies have been removed, or they will cool too quickly to be shaped over the rolling pin.
If you do not have two rolling pins to work with, use anything else of a similar shape—wine bottles, straight glasses, broom handles, etc.
If the cookies cool too quickly to shape, reheat in the oven long enough to soften.
Having said all of the above about shaping these cookies to curve them in the traditional manner, let me add that they are equally fine if left flat, and are much less fragile and therefore easier to wrap and store. If they are to be left flat, they may be baked on baking pan liner paper or unbuttered aluminum foil. When done, slide the paper or foil off the cookie sheet and let stand until cookies cool. Then just lift them off the paper or, very gently, peel the foil away.
